PASTA FRITTATA 
1 lg. egg
2 c. plain cooked pasta
1/2 c. (2 oz.) shredded Cheddar cheese
Salsa or ketchup (optional)

Beat egg with fork in medium bowl. Add pasta and stir to mix. Add cheese and toss until evenly distributed. Heat a 10 inch nonstick skillet over medium high heat. Spray skillet with vegetable cooking spray. Spread pasta mixture in skillet and press down gently with spatula. Cover, reduce heat and cook 3-5 minutes until eggs look set and cheese is melted. Cut into 4 wedges and flip onto serving dish. Serve with salsa if desired. Makes 4 servings.
