HOW TO MAKE GLUTEN 
Put 5 pounds of flour in a large pan. Add 8 cups of water and knead about 5 minutes or until all lumps are gone. Cover with water and soak an hour or overnight. As you wash, try to keep it in a ball. Wash until water is fairly clear, but do not wash too much.

GLUTEN BROTH:

6 tbsp. salad oil
6 c. water
5-6 tbsp. brown sugar or honey
3/4 c. soy sauce
2 onions, sliced
1 clove garlic, minced
Celery stalk, if desired

Put all ingredients into pot and boil. Cut the gluten, flatten out and put into pot. Cook for about an hour with medium heat. Stir once in a while. When done, there will be no liquid left.
