OVEN BAKED STEW 
1 1/2 or 2 lbs. lean stewing beef
4 carrots, sliced
2 stalks celery, sliced
1 med. onion, sliced

Cut beef in bite size pieces - do not brown. Put in small roaster. Add carrots, celery, onion, Sprinkle with:

1 tsp. sugar
1 tsp. salt
1/8 tsp. pepper
2 tbsp. tapioca

Add:

1 c. water
1 c. tomato juice (V8 is great)

Cover and bake 3 hours at 300 degrees. Add 4 potatoes (quartered) and 1/2 cup liquid (1/4 water and 1/4 juice). Bake 1 more hour - covered.
