EASY OVEN BEEF STEW 
1 1/2 lbs. stew meat
2 c. potatoes
3 stalks celery
1 med. onion
3 to 4 carrots
1 sm. green pepper
2 tsp. salt
1 (12 oz.) can V-8 juice
3 tbsp. tapioca

Place cubed meat and veggies in roaster. Sprinkle on tapioca, salt, and V-8 juice; stir up. Cover tightly and bake at 250 degrees for 5 hours.
