FROZEN LEMON PUDDING | |
1/2 c. Pet milk (ice cold) 1 egg yolk 1/4 tsp. grated lemon rind 3 tbsp. sugar 1 tbsp. lemon juice 1 egg white, beaten until stiff 2 tbsp. sugar 1/4 c. graham cracker crumbs (reserve for top) 1 1/2 tbsp. lemon juice Chill in bowl until ice cold (Pet milk). Mix in large bowl egg yolk, lemon rind, sugar, and lemon juice. Beat until stiff (egg white). Add 2 tablespoons sugar. Fold into egg mixture, whip chilled milk until fluffy. Add 1 1/2 tablespoons lemon juice. Beat until fluffy. Fold into egg mixture, pour into ice tray. Sprinkle graham cracker crumbs over the top. Freeze at coldest temperature, do not stir. Serves 4. |
