SPINACH CORRINNE DUNBAR 
2 boxes frozen spinach, chopped
3/4 tbsp. baking soda
3/4 tbsp. salt
1 stick butter or 1/2 stick butter
1 tbsp. flour
4 oz. evaporated milk (12 oz. can)
1-4 hard-boiled eggs, diced

Boil spinach according to package directions and drain. Melt butter and stir in flour. Blend milk, add spinach and mix, season to taste. Bake at 350 degrees for 40 minutes uncovered. Sprinkle diced eggs on top when serving.
