SPINACH FANDANGO 
1 lb. ground beef (I leave the beef out if using as a side dish or in for a main meal)
1 med. onion, chopped
16 oz. can mushrooms
1 to 2 garlic cloves, crushed
1 tsp. oregano
1/4 c. peanut oil
2 (10 oz.) pkgs. frozen chopped spinach, thawed
1 (10 oz.) can cream of celery soup
1 c. sour cream
1 sm. pkg. Mozzarella cheese

Brown beef, onion, mushrooms and garlic in peanut oil in large saucepan. Press spinach in a sieve to remove all excess liquid. Add spinach, oregano, cream of celery soup and sour cream to saucepan. Mix well and heat thoroughly through. Add Mozzarella cheese for last few minutes; mix and serve.
