1/2 c. butter, softened 1/2 c. crunchy peanut butter 1 1/2 c. firmly packed light brown sugar 2 eggs 3/4 c. sugar 2 1/2 c. all purpose flour 1 tsp. baking soda 1/2 c. flaked coconut 3/4 c. Spanish peanuts Cream butter and peanut butter; gradually add sugar, beating well at medium speed of electric mixer. Add eggs, mixing well. Stir in combined flour and soda. Add to creamed mixture, mixing well. Stir in coconut and peanuts. Shape dough into 1 inch balls. Place on ungreased cookie sheet. Bake at 350 degrees for 12 to 15 minutes or until lightly browned. Cool on wire racks. Yield: 6 dozen. |
