CARAMEL PIE 
2 1/2 c. sugar
5 tbsp. flour
4 tbsp. butter
3 c. sweet milk
4 large eggs, separated
pinch of salt
vanilla (optional)
2 baked pastry shells

Mix in large saucepan 2 cups sugar, flour, butter, milk, salt and slightly beaten egg yolks. Place over medium heat and cook until slightly thickened. Place 1/2 cup of sugar in heavy skillet over medium heat until it has melted and is a bright brown color. When this stage is reached, add the first mixture to the skillet, stirring constantly; continue to cook until mixture is smooth, creamy and thick. Remove from heat. Pour into 2 (9-inch) baked pastry shells. Top with meringue and bake at 350°F until golden brown.
