MOM'S ONION PIE 
CRUST:

1/4 c. melted butter
1 c. fine cracker crumbs (saltine)

FILLING:

2 c. thin sliced lg. sweet white onion
2 tbsp. butter
3/4 c. milk
2 eggs, slightly beaten
Dash pepper
1/4 tsp. dry mustard
1/4-1/2 c. shredded cheese (sharp or mild to taste)
Paprika

Crust: Pour melted butter over crumbs; mix well. Press firmly into pie pan.

Filling: Saute onions in 2 tablespoons butter until firm tender, not brown. Place in crumb crust (juice and all). Combine milk, eggs, pepper and dry mustard. Beat well. Pour over onions. Sprinkle cheese over all. Sprinkle with paprika. Bake at 350 degrees for 20-30 minutes or until filling is set and edge of crust is puffed and brown.
