APPLESAUCE FRUIT CAKE | |
4 c. hot applesauce 1 c. butter 2 c. sugar 4 1/2 c. flour 4 tsp. baking soda 2 1/2 tsp. cinnamon 1 tsp. nutmeg 1 tsp. allspice 1/2 tsp. cloves 1 lb. light raisins 1 lb. dark raisins 1 lb. walnuts 1 lb. mixed candied fruit 1/2 lb. whole red and green candied cherries Mix applesauce, butter and sugar. Let stand 2 to 3 hours or overnight. Combine dry ingredients and add to the applesauce mixture. Add fruits and nuts. Grease 3 or 4 loaf pans. Line them with wax paper. Bake at 250 degrees for 2 1/2 hours. Pat's recipe uses shortening instead of butter. She heats the applesauce mixture before letting it stand. Her recipe adds 1 pound of dates and she dredges all the fruit and nuts in the flour mixture before combining with applesauce. |
