OLIE BOLLEN 
2 pkgs. dry yeast
1/4 c. warm water (105-115 degrees)
Pinch of sugar
1/2 c. butter
3/4 c. granulated sugar
3 eggs
1 c. milk
4 c. all purpose flour
Vegetable oil for deep frying
Powdered sugar

In a small bowl, sprinkle yeast on water and add a pinch of sugar; set aside.

In large bowl beat butter, 3/4 cup sugar and eggs. Add milk and yeast mixture; mix well. Slowly add flour and combine thoroughly. Let rise until double. Heat oil to 350 degrees in deep fryer or saucepan. Form dough into 30 balls.

Using 2 tablespoons, drop balls into hot fat; cook a few at a time, but do not crowd them in the fat. Cook slowly on one side until a deep brown, then turn and cook the other side. Remove from fat and drain on a thick layer of paper towels. Roll in granulated sugar to coat. Cool and serve.
