BUTTERMILK DOUGHNUTS 
3 eggs, beaten
2 c. sugar
1 1/2 c. warm mashed potatoes
1/3 c. melted butter
1 c. buttermilk
6 c. flour
4 tsp. baking powder
1 1/2 tsp. baking soda
1 tsp. salt
1/2 tsp. nutmeg
1 tsp. vanilla

Add sugar to eggs, beating well. Stir in potatoes, butter and buttermilk. Add sifted dry ingredients. Stir only until all dry particles are moistened. Chill covered dough until very cold, overnight is fine.

Roll out and cut. Let rest 10 to 15 minutes. Fry in deep fat (375 degrees). Makes 5 to 6 dozen.

Use flour sparingly when rolling out. I like to roll and cut all of them and lay on cookie sheets, then start with first sheet to deep fat fry.
