BUTTERMILK CHICKEN | |
3 lbs. pick of the chicken or any other kind of chicken pieces you like 2-3 c. buttermilk 2 c. flour 2 tbsp. parsley flakes Salt and pepper Oil Wash and pat chicken dry. Place in large bowl. Pour buttermilk over chicken. Place bowl in refrigerator for 1 to 1 1/2 hours, turn pieces every so often. Mix flour, salt, pepper and parsley in bowl. Coat pieces in flour mixture. Fry in frying pan in oil until brown. Preheat oven to 400 degrees. Take enough buttermilk to coat bottom of 9x13x2 inch baking dish. Place browned chicken in baking dish. Bake for 1 to 1 1/2 hours until chicken is fork tender. Make buttermilk biscuits with leftover buttermilk, if desired. |
