APRICOT DELIGHT 
1 lg. apricot Jello
1 (8 oz.) cream cheese, diced
1/2 c. sugar
1 lg. can crushed pineapple
1 c. whipping cream, whipped

Add 2 cups water to a saucepan; bring to a boil. Add Jello, sugar, pineapple and cream cheese. Stir until blended. Chill until partially congealed. Fold in whipped cream. Pour into a glass bowl or greased mold.
