TRADITIONAL HONEY CAKE 
6 eggs
2 c. sugar
2 c. cold black coffee
2 c. honey
4 tbsp. oil
1/4 c. orange juice
1 tbsp. McCormick's Orange Rind
6 c. flour
4 tsp. baking powder
2 tsp. baking soda
1/2 tsp. ground cloves
1/2 tsp. ground nutmeg
1/2 c. raisins
1 c. walnuts, coarsely chopped

Measure coffee and add honey. Set aside. Beat eggs and sugar, add oil and beat until light. Add orange juice and rind. Put all dry ingredients into one bowl. Alternate adding dry ingredients and coffee, honey mixture. Makes a loose batter. DON'T grease pan. Line with brown bag, cut to fit.

Pour in batter and sprinkle top with sliced almonds (about 1/2 cup). Bake at 350 degrees for about 45 minutes. Lower heat to 325 degrees and bake an additional 1/2 hour or until dark. Cool and peel off paper. Use a 14 x 9 x 2 inch pan. Line ENTIRE pan, including sides. Moist and delicious! Freezes well.
