CHICKEN FRIED STEAK 
4 cube steaks
3 eggs, beaten well
1 c. flour, mixed with 1 tsp. pepper
1/2 c. vegetable oil

Dip steaks in eggs, then cover each thoroughly in flour mixture. Return steaks to eggs, then to flour again. Heat oil in skillet until very hot, but not smoking. Use enough oil to have about 1/2-inch in skillet.

Put steaks in oil and cook 6-8 minutes, until golden brown on bottom. Turn and cook another 3-4 minutes. Remove steaks from oil with slotted spatula and drain on paper towels.
