APPLE-OMELET CASSEROLE 
1 (9 oz.) can crushed pineapple, drained
2 c. applesauce
Juice of 1/2 lemon
3 eggs, well beaten
1/2 c. brown sugar
1/2 stick butter, melted

Combine drained pineapple and applesauce. Add remaining ingredients and mix well. Pour into casserole dish and bake at 350 degrees for 40 minutes. Yield: 4-6 servings. This is delicious served as a meat accompaniment.
