LEMON 'N APPLE CHESS PIE 
FILLING:

1 c. granulated sugar
1/2 tsp. salt
1/2 tsp. grated lemon peel
4 eggs, beaten
3 tbsp. lemon juice
1/4 c. butter, melted
1 c. unsweetened applesauce
1 (9") unbaked pie shell

Make filling by combining sugar, salt and lemon peel; set aside. Combine eggs, lemon juice, butter and applesauce. Add dry ingredients to egg mixture; beat with mixer until well blended. Pour into unbaked pie shell; bake at 450 degrees for 15 minutes. Reduce heat to 350 degrees; bake 15 minutes longer or until set. (May take total of 40 minutes baking time.) Cool on wire rack. Yield: 8 servings.
