MINT SNOWBALLS 
1/3 c. sugar
2 tbsp. light corn syrup
1/4 lb. (16) marshmallows
2 tbsp. water
1/2 tsp. peppermint extract
1 1/2 c. shredded coconut

Combine sugar, corn syrup and water in a small pan. Place over medium heat and add extract. With a toothpick dip each marshmallow in hot syrup and then roll in coconut. A few drops of green or red food coloring may be added to hot syrup.
