LITTLE CHEESECAKES 
1 lb. cream cheese, softened
3/4 c. sugar
1 tbsp. lemon juice
2 eggs
1 tsp. vanilla
Vanilla wafers
Canned cherry pie filling

Combine cream cheese, sugar, lemon juice, eggs and vanilla. Beat at high speed with mixer for 5 minutes. Line small (1 1/2 inch diameter) cupcake pans with paper liners; foil liners may be used on a cookie sheet. Put one vanilla wafer in bottom of each liner. Pour about 1 tbsp. cake mixture into each cup. Bake in preheated 350 degree oven 20 minutes or until thin cracks appear on top. Remove from oven and let cool. They will appear to fall. Top with 1 teaspoon cherry pie filling. Makes 36.
