SPLIT PEA, LENTIL AND BARLEY
SOUP
 
In:

1 tbsp. oil

Cook:

2 med. onions, chopped, until tender

Add:

1/2 c. dried green split peas
1/4 c. lentils
1/4 c. barley
5 c. water
1 bay leaf

Simmer 45 minutes.

Add:

1 unpeeled potato, diced
1 carrot, chopped
1 stalk celery with leaves, chopped
1 tsp. basil
1 tsp. salt
1/4 tsp. thyme
1/4 tsp. freshly ground pepper

Simmer 30 minutes or until vegetables are tender. Remove bay leaf.
