SWEET POTATO PIE 
2 c. mashed, cooled sweet potatoes
1/2 c. brown sugar, firmly packed
1/4 c. tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1 c. sweet milk
3 egg yolks
1/3 c. melted butter
3 egg whites
9 inch unbaked pie shell

Combine sweet potatoes, sugar, salt, nutmeg, and cinnamon. Beat in egg yolks. Add butter to potato mixture. Add milk and mix well. Beat egg whites until stiff but not dry and fold into mixture. Pour into unbaked pie shell and bake in 425 degree oven for 15 minutes. Reduce heat to 375 degrees and bake 25 minutes longer or until firm. Makes 6 servings.
