COCONUT AND PINEAPPLE PIE 
1 stick butter, melted
1 1/2 c. sugar
2 1/2 tbsp. flour
4 eggs, slightly beaten
8 oz. crushed pineapple, undrained
6 oz. frozen grated coconut, thawed
Pinch of salt
1 tsp. vanilla
1 (9") unbaked pie shell

Preheat oven to 350 degrees. In a large bowl mix together the butter, sugar, flour, eggs, pineapple, coconut, salt and vanilla. Pour the mixture into the pie shell and bake 40-50 minutes, until set.
