MEXICAN CHICKEN CASSEROLE 
3/4 c. hot water
3/4 c. salsa
1 tbsp. butter, melted
2 c. Stove Top chicken flavor stuffing mix
4 skinned boned chicken breast halves
1/2 c. shredded Monterey Jack cheese or Monterey Jack cheese with jalapeno peppers

Combine water, 1/4 cup of the salsa, the butter and the stuffing mix in 2 quart baking pan. Arrange the chicken on the stuffing. Pour remaining salsa over chicken. Loosely cover the pan. Bake at 350 degrees for 35 minutes. To serve: Remove chicken to serving plate and cover with cheese.
