QUICK PINEAPPLE COFFEE CAKE 
1 1/2 c. sifted all-purpose flour
2 tsp. baking powder
1/4 tsp. salt
2 tbsp. sugar
1 egg
1/2 c. milk
1/3 c. shortening, melted
1/3 c. fresh pineapple, diced & well drained
2 tbsp. honey
1 tbsp. butter, melted
3 tbsp. chopped pecans

Sift together flour, baking powder, salt and sugar. Beat egg; add milk and cooled shortening to egg. Pour into flour mixture; stir only until dry ingredients are moistened. Turn into greased and floured 8 inch round layer cake pan. Mix pineapple, honey and butter together. Spoon pineapple topping over batter. Sprinkle nuts on top. Bake in preheated 400 degree oven for 30 minutes. Serve warm. Serves 8.
