JEN'S STEWED CHICKEN | |
Any combination of chicken breasts, drumsticks and thighs Flour Butter and sunflower oil Salt Pepper Skin, wash and pat dry each piece of chicken. Place chicken on cookie sheet. Sprinkle with small amount of salt and large amount of black pepper on both sides. Dust each piece thoroughly with flour. Allow to sit several minutes. Melt butter and sunflower oil in large heavy skillet. Brown each piece of chicken until all are done. Place all pieces back in skillet. Lower heat and simmer, covered 1 1/2 to 2 hours. Chicken will begin to fall off of bone when done. Turn frequently when simmering. Remove chicken and make gravy from drippings in usual way. Serve with plain rice. |
