TWICE BAKED POTATOES 
5 lg. potatoes
1 c. sour cream
1 3/4 c. shredded Cheddar cheese
1/4 c. butter
Paprika

Bake potatoes for 1 hour at 400 degrees. Remove from oven and slice lengthwise. Scoop out as much of the potatoes as possible without damaging the skin. Mash the insides of the potatoes with the sour cream, 3/4 cup of the cheese, butter, salt and pepper to taste. Distribute the mixture between 8 of the halves and sprinkle them with the remaining cheese and then paprika. Reheat until the cheese melts (about 10 minutes).
