SALAD FOR SPRING AND SUMMER 
2 c. cantaloupe balls
1 sm. pineapple, peeled, cored & cubed
1/2 c. fresh strawberries
Lettuce leaves
Mint dressing

May add other fruits if you like.

Combine fruits over lettuce leaves on salad plate; serve with Mint Dressing.

MINT DRESSING:

1 c. sugar
1/3 c. water
1 tbsp. lemon juice
1/2 c. packed mint leaves

In saucepan, combine sugar, water, lemon juice; bring to a boil, stirring occasionally; remove from heat. Combine sugar mixture and mint leaves and process in food processor until leaves are chopped. Let chill. Serve over fruit salad.
