CAULIFLOWER MORNING 
1 lg. head cauliflower
1 1/2 c. med. rich white sauce
1 c. grated Cheddar cheese
2/3 c. buttered bread crumbs

Wash and break apart cauliflower to flowerets. Steam in 1 inch boiling salted water, in covered pan, for 10-15 minutes. Drain, put in casserole (8 x 10 inches). Cover with 1/2 cup cheese, sauce, 1/2 cup cheese and crumbs. Bake at 350 degrees for 20 minutes.

CREAM SAUCE:

3 tbsp. butter
3 tbsp. flour
1/2 tsp. salt
3/4 c. milk
3/4 c. light cream

Melt butter, add flour and salt, then milk and cream. Cook until thickened. Servings: 6-8.
