BLACK-EYED PEA SKILLET DINNER 
1 lb. ground beef
1 1/2 c. chopped onion
1 c. chopped green pepper
2 (16 oz.) cans black-eyed peas, drained
1 (16 oz.) can whole tomatoes, undrained & coarsely chopped
3/4 tsp. salt
1/2 tsp. pepper

Cook ground beef, onion and green pepper over medium heat until beef is browned, stirring to crumble meat; drain. Add remaining ingredients; bring to boil, reduce heat and simmer 30 minutes, stirring often. Yield: 6 servings.
