PORK AND PEPPER GOULASH | |
1 lb. lean pork bite sized cubes 2 slices bacon cut in 1 inch pieces 1 lg. onion, sliced 1 green pepper, cut in strips 1 red pepper, cut in strips 1 tomato, chopped coarsely 2 to 3 tsp. paprika 2 cloves garlic, minced 1 tsp. caraway seed 1 tsp. salt 2 tsp. corn starch 1/4 c. chicken or beef broth Cook bacon until crisp. Saute onion for 2 minutes until wilted. Add pork cubes, peppers, tomatoes, paprika, garlic, caraway seeds and salt. Cook, stirring over high heat for 5 minutes. Turn heat down to low and simmer 10 minutes. Stir corn starch and broth together and add to meat mixture. Heat to boiling. Stir and cook until juices thicken. Serve with hot buttered noodles or rice. |
