PECAN DELIGHT 
PIE MIX:

20 Ritz crackers
1 tsp. baking powder
1 tsp. vanilla flavoring
1/2 to 1 c. chopped pecans
3 egg whites
1 c. sugar

TOPPING:

1/2 pt. whipping cream
3 oz. cream cheese, room temperature
2 tbsp. powdered sugar

1. Crush crackers in a large bowl.

2. Add baking powder, vanilla and pecans to crackers mixing thoroughly.

3. Beat the 3 egg whites, as if making meringue, gradually adding the sugar a small amount at a time. Beat until very stiff.

4. Fold egg whites and sugar into the cracker mixture.

5. Bake in a greased 9 inch pie pan for 30 minutes at 350 degrees. Let cool.

6. Cream the cheese with a mixer gradually adding the whipping cream. Mix until stiff.

7. Add powdered sugar and mix for just a second longer.

8. Spread topping on cool pie.

9. Serve chilled if desired.
