MAKE - YOUR - OWN GLUTEN (WHEAT
PROTEIN)
 
8 c. bread flour
2 1/2 to 3 c. water

Mix flour with enough water to make a stiff dough. Form into a ball and knead about ten minutes. Place in bowl and cover with additional water. Let stand from 30 minutes to overnight. Knead dough with hands under water to wash out starch. Pour off starchy water frequently and continue washing until water is almost clear and gluten gathers into a solid mass.
