CORN FRITTERS | |
1 (16 oz.) can whole kernel corn, drained 1 c. all-purpose flour 1 tsp. salt 2 eggs 1/4 c. milk In electric skillet, heat 1/2 inch of salad oil to 400 degrees. In medium sized bowl with fork, stir in 1 tablespoon of oil and all ingredients just until blended. Drop batter by heaping tablespoon into hot oil; fry 3-5 minutes until browned, turning once. With slotted spoon, remove fritters to paper towels and drain. Serve with syrup or sprinkle with confectioners' sugar. |
