SPRITZ COOKIES 
3/4 lb. butter
1 c. sugar
1 egg, beaten
1/2 tsp. vanilla or almond extract
4 c. flour
1/4 tsp. salt

Preheat oven to 375 degrees. Sift flour and salt. In large bowl, cream butter and sugar. Add egg and flavoring. Add flour mixture gradually, stirring until smooth and well combined.

Fill cookie press and press out cookies, reversing handle to cut off dough. Cookies should be 1 1/2 inches apart. Bake 8 to 10 minutes until light golden brown. Remove to wire rack to cool.

Makes 6 to 8 dozen.
