PORK AND SAUERKRAUT 
1 qt. sauerkraut (drain)

Add 2 cups water and 2 pounds spare ribs or country style ribs. Boil, covered, together for 1 1/2 hours on medium heat. Then remove the ribs and add 2 medium size grated potatoes to the kraut and cook about 10 or 15 minutes on medium heat; stir often. Kraut should be fairly thick. If too thick, add a little water. Put meat back in when you serve.
