SALLY'S FABULOUS RICE PUDDING 
1/2 c. uncooked rice (whole grain)
2 c. light cream
2 c. milk
3/4 c. sugar
1/4 tsp. salt
4 eggs
1/2 c. heavy cream
2 tbsp. vanilla
Dash nutmeg for top

Mix rice, light cream, milk, sugar and salt in top of double boiler. Cover and cook over boiling water 1 hour; stir occasionally. Beat eggs in bowl, slowly dribble rice mixture into eggs, beating constantly. Return mixture to top of double boiler and cook over boiling water until pudding coats a spoon. Cool completely. Soak raisins in 1/2 gallon water. Beat heavy cream until holds shape. Mix gently with rice, when cool add drained raisins. Enjoy.
