CHRISTMAS CANDIED PICKLES 
2 gallons lg. cucumbers, peeled and seeded

Soak 24 hours in 2 cups lime

8 1/2 qt. water

Drain and wash cukes in clear water, soak 3 hours in cold water. Drain simmer 2 hours 1 cup vinegar, 1 small bottle red food coloring, 1 tablespoon alum and water to cover, drain.

Make syrup 2 cups vinegar, 2 cups water, 10 cups sugar, 8 sticks cinnamon, 1 large package red hots, cinnamons. Heat syrup until dissolved (quite some time). Pour over pickle rings. Let stand overnight. Drain and heat syrup for 3 days. Pack and seal.
