JERUSALEM ARTICHOKE RELISH 
4 qt. artichokes
8 green peppers
1 qt. vinegar
2 tsp. turmeric
2 lbs. onions
2 lbs. brown sugar
4 tbsp. mustard
2 tbsp. salt

Grind artichokes and onions. Sprinkle salt on them and let stand one hour. Drain and add other ingredients and cook until, about 20 minutes.
