FRIED RICE 
1 c. uncooked rice
1 3/4 c. water
1/4 c. vegetable oil
1 egg, slightly beaten
1/2 c. (or more) diced pork (or chicken or shrimp)
1 tsp. salt
1/4 tsp. pepper
1/2 c. chopped onion
2 tbsp. soy sauce

Add rice to water. Bring to boil. Reduce heat to low. Cover and continue cooking until done, but not soft, about 14 minutes. Remove from heat. Set aside and keep covered for about 15 minutes. In large skillet, heat oil until hot. Add egg and cook, stirring constantly, until set. Add meat. Add remaining ingredients, including rice, stirring to blend. Heat until hot. (When using fresh chicken or pork, quick fry before adding to recipe.)
