EVERYDAY CUPCAKES 
1/2 c. shortening
2 c. cake flour
1 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
3/4 c. milk
1 beaten egg
1 tsp. vanilla

Stir shortening to soften. Stir in dry ingredients. Add half the milk and the egg. Mix until flour is dampened. Beat about 2 minutes at low speed on electric mixer. Add remaining milk and vanilla, beat 1 minute longer. Pour in muffin pans. Bake at 375 degrees about 20 minutes.
