PEPPERMINT GINGER BARS 
1/2 c. butter
1/2 c. sugar
1 egg, beaten
1/2 c. light molasses
1 1/2 c. flour
1/2 tsp. salt
1/2 tsp. ginger
1/2 tsp. cinnamon
1/2 tsp. ground cloves
1/2 c. crushed peppermint candy
1/2 tsp. baking soda

Cream together butter and sugar until light and fluffy. Blend in egg and molasses. Combine flour, salt, soda and spices; blend into creamed mixture. Stir in 1/2 cup candy. Spread batter evenly in greased 9x13 inch baking pan. Bake in preheated 350 degree F. oven 25-30 minutes or until done. Cool. Frost with Peppermint Icing. Sprinkle crushed peppermint candy on top.

PEPPERMINT ICING (For Peppermint Ginger Bars) :
3 1/2 c. confectioners' sugar
1 pkg. (3 oz.) cream cheese, softened
2 tbsp. water
1/2 tsp. peppermint extract
Red food coloring

Cream together 2 cups sugar and cream cheese until light and fluffy. Add water, peppermint extract and a few drops food coloring. Blend in remaining sugar. Also fun to use green food coloring instead of red and put a red cinnamon candy in the middle of each bar.
