LENTIL SALAD 
2 c. dry lentils
1 sm. onion, chopped
4 tomatoes, chopped
4 slices cucumber, chopped
1 tsp. salt & pepper (to taste)
1 tsp. marjoram
1 tbsp. vinegar
2-3 tbsp. olive oil
Chopped parsley

Wash lentils and cook just until tender. NO LONGER. Drain. Mix with vegetables sprinkled with salt and pepper and marjoram. Add oil and vinegar; mix gently. Taste; correct seasonings. Maybe add more vinegar and oil.
