POLYNESIAN HAM | |
1/4 c. sugar 1/4 c. cornstarch 1/4 tsp. salt 1 c. pineapple juice, unsweetened 1/3 c. orange marmalade 1/3 c. lemon juice 1 lb. fully cooked ham, cut into 1" cubes 1 can (11 oz.) mandarin orange sections, drained 1 can (13 1/2 oz.) pineapple tidbits, undrained 3/4 c. seedless green grapes, cantaloupe or honeydew chunks 1/2 c. slivered almonds 6 c. fluffy white or curried rice Combine sugar, cornstarch and salt in heavy fry pan; mix well. Place over direct high heat; stir in pineapple juice, marmalade and lemon juice, cook, stirring constantly until thickened. Reduce heat to low and fold in ham; add fruits and almonds. When hot serve atop hot rice. |
