UPSIDE DOWN HAM CASSEROLE | |
3 tbsp. soft butter 1 tsp. mustard 2 1/2 tbsp. flour 1/2 tsp. salt 1/2 c. green pepper 1 1/2 tsp. minced onion Ham slices, about 1/4 inch thick 3 tbsp. brown sugar 1 can sliced pineapple, well drained 1 1/3 c. rice 1 c. water 1 c. milk Combine butter, sugar, and mustard in baking dish. Place in 400 degree oven until butter melted. Blend; top with pineapple slices. Return to oven. Meanwhile, mix remaining ingredients except ham in saucepan. Bring to a boil. Reduce heat, cover, and simmer 5 minutes. Stir occasionally. Top pineapple with ham. Spread with rice mixture. Cover; bake 10 minutes. Cool for 5 minutes. Invert on serving dish. Serves 4. |
