OVEN FRIED CHICKEN 
2 1/2 - 3 lb. broiler fryer, cut into serving pieces
1/2 c. unsifted all purpose flour
1/8 tsp. pepper
1 tsp. salt
1/2 tsp. poultry seasoning
1/2 c. melted butter

Preheat oven to 400 degrees.

Wipe chicken well with damp paper towels. In a clean paper bag, combine flour, salt, pepper and poultry seasoning. Shake chicken a piece at a time in bag, coating well. Arrange chicken in a very shallow pan, 15"x10"x1". Brush butter over chicken. Cover pan with foil; bake 30 minutes. Remove foil. Increase oven temperature to 450 degrees; bake 15 to 20 minutes longer; or until fork tender and golden brown.
