ZUCCHINI ROUND PANCAKES 
1/3 c. Bisquick
1/8 tsp. pepper
1/4 c. grated Parmesan cheese
2 eggs, lightly beaten
2 c. shredded zucchini

Blend first three ingredients together. Add eggs. Fold in zucchini. Melt 2 tablespoons butter in frying pan. Medium heat. Put 2 tablespoons mixture into pan. Fry 2 to 3 minutes on each side or until browned. Serve warm. Serves 10 to 12 pancakes.
