BAKED CHICKEN OR TURKEY SALAD 
3 c. cooked chicken or turkey, diced
3 c. chopped celery
4 tsp. minced onion
1 tsp. salt
1/8 tsp. pepper
1 1/2 c. mayonnaise, not salad dressing
1/4 c. lemon juice
2 c. potato chips, crushed
1 c. unsalted cashews

Combine turkey or chicken, celery, nuts, onion, salt, and pepper. Add mayonnaise and lemon juice. Heap into large baking dish. Sprinkle the top with crushed potato chips. Bake at 450 degrees for 15 minutes.
