DATE PINWHEEL COOKIES 
1/2 c. butter
1/2 c. light brown sugar
3/4 c. granulated sugar
1/2 tsp. vanilla
1 egg
2 c. sifted flour
Pinch of salt
1/4 tsp. baking soda
7 1/4 oz. pkg. dates
1 c. chopped nuts

Dough: Cream butter and add brown sugar. Add 1/2 cup granulated sugar, vanilla, and egg. Beat until light. Add sifted, dry ingredients. Chill until firm enough to roll.

Filling: Cut dates in small pieces. Bring to boil with remaining 1/4 cup granulated sugar, pinch of salt, and 1/3 cup water; simmer for 5 minutes, stirring often. Add nuts. Cool.

Halve dough; roll each half on floured wax paper into a 9 x 12 inch rectangle (thin). Spread with filling; roll up tightly from end to end. Wrap in wax paper; chill overnight. Slice 1/8 inch thick. Bake at 375 degrees for 10 minutes.
